INGREDIENTS:
- 10 oz. Ty Ling Chinese Noodles
- 8 cups strong garlic broth
- 1 ½ ripe fresh Avocado, seeded, peeled and cut in half
- 8 scallions, thinly sliced
- 8 (vegan) egg halves
- 4 tbsp Lucky Foods Sweet Pickled Ginger
- 1 tsp Ty Ling Five Spice Seasoning, more to taste
- Optional: Sesame seeds, to garnish
DIRECTIONS:
- Fill a 4-quart saucepan with water and bring the water to a boil on high heat. Cook Ty Ling Chinese Noodles following the package instructions. Once cooked, drain and rinse off with cold water.
- Put the broth and garlic in another saucepan and bring to a boil over medium heat, then reduce the heat to medium-low to maintain a simmer and continue cooking for 3 minutes. Remove the saucepan from the heat.
- Put the avocado in the jar of an immersion blender. Pour broth over the avocado and blend with Ty Ling Five Spice Seasoning until creamy.
- Separate the cooked noodles into four bowls. Ladle equal amounts of the avocado broth over the noodles in each bowl.
- Place the egg halves on top of the noodles in one of the bowls. Repeat with the remaining eggs.
- Finish by topping each bowl with avocado slices, sliced scallions and sweet pickled ginger. Optional: sprinkle with more Ty Ling Five Spice Seasoning. Serve and enjoy!
