General Tso's Chicken Bao Buns with Marinated Cucumber

INGREDIENTS:

For the Chicken:

  • 2 tbsp Ty Ling’s sesame oil
  • 2 tbsp Ty Ling’s General Tso’s sauce 
  • 2 boneless, skinless chicken breasts
  • 2 tbsp soy sauce

For the marinated cucumber:

  • 1 tsp Ty Ling’s sesame oil
  • 1 small cucumber, thinly sliced
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame seeds

To Assemble:

  • 4 Steamed bao buns (store-bought or homemade)
  • Fresh cilantro 
  • Additional sesame seeds for garnish

DIRECTIONS:

  1. In a shallow bowl or resealable bag, combine the soy sauce and sesame oil. Add the chicken breasts and marinate for at least 30 minutes (or up to 2 hours)
  2. Preheat your grill to 400 degree fahrenheit. Grill the chicken for about 6 minutes per side, or until fully cooked and lightly charred. Remove from heat and let rest for a few minutes, then slice into 1-inch pieces.
  3. Place the sliced chicken in a bowl and toss with the General Tso’s sauce until evenly coated.
  4. While the chicken cooks, combine the sliced cucumber with soy sauce, rice vinegar, sesame oil, sesame seeds, and chili oil. Let it sit for at least 10–15 minutes to soak up the flavor.
  5. Warm the bao buns according to package instructions (typically steaming for a few minutes). Fill each bun with a few pieces of chicken, a spoonful of marinated cucumber, and a sprinkle of cilantro and sesame seeds.
  6. Serve immediately while the buns are warm and fluffy.
