Pineapple Fried Rice

  1. Cut the pineapple in half and scoop out the fruit from the pineapple skin, creating a boat. Dice the pineapple into cubes and set aside.
  2. Season and grill the chicken tenders until cooked through, then dice them into cubes.
  3. Cook the Ty Ling fried rice according to the instructions. Add grated ginger and General Tso sauce, then stir well. Add the diced pineapple and chicken to the pan.
  4. Serve the rice inside the pineapple with fresh scallions and lemon juice if desired.
