Cut your seedless watermelon in half, and remove the contents inside (should equal about 1 cup), preserving the halved rind for later use.
In a blender, combine the coconut milk, lime juice, honey, mint, watermelon flesh and Sesame Oil. Blend until pureed then add the frozen watermelon and continue blending until creamy.
Pour into the halved watermelon rind and serve immediately.
