INGREDIENTS:
- 1/4 cup unsweetened coconut milk
- 1 tbsp fresh lime juice
- 2 tbsp honey, plus more to taste
- 1/4 cup loosely packed mint leaves
- 1 cup cubed, seedless watermelon unfrozen
- 4 cups cubed seedless watermelon, frozen
- 1 tsp Ty Ling Sesame Oil
- 1 seedless watermelon
DIRECTIONS:
- Cut your seedless watermelon in half, and remove the contents inside (should equal about 1 cup), preserving the halved rind for later use.
- In a blender, combine the coconut milk, lime juice, honey, mint, watermelon flesh and Sesame Oil. Blend until pureed then add the frozen watermelon and continue blending until creamy.
- Pour into the halved watermelon rind and serve immediately.
